Baked oatmeal???

After quite some time of not baking, I got the itch to bake something (but not just anything of course!) on Sunday. It was a lazy, quiet afternoon and the need to bake hit with a vengeance. This caused me to start pantry digging and while we had several cake mixes to choose from, cake was not what I was wanting. Further digging in another cabinet led me to a can of pumpkin.

I did also make some mini pumpkin cakes from Dessert for Two, that were so delicious that no photo evidence exists... If you need small batch recipes for baked goods and actual meals, Dessert for Two by Christina Lane, is your place to go! I've tried a ton of her recipes and love having the option to bake a few cupcakes at a time!

After finishing up the mini cakes, I still had plenty of pumpkin left for something else. I keep seeing posts on Facebook and Instagram of people making baked oatmeal for breakfast, and figured there had to be a recipe for a pumpkin version out there somewhere. A quick search later and I found this recipe from Clean & Delicious and decided to give it a whirl. As per usual, I did modify the recipe to match what I had in the pantry and here's what I came up with..
