Quick and Easy Chicken Enchiladas

In the hustle and bustle that comes with summer, I've learned that keeping ingredients for simple, delicious recipes is a necessity. One recipe that we love to make is Cream Cheese Chicken Enchiladas. They are quick, only take a handful of ingredients, and taste amazing! This is a recipe that works for any season, and its even freezer friendly!



While there are a lot of things I love about this recipe, I think my favorite is how versatile it is. You use a shredded rotisserie chicken, shredded chicken in your instant pot (see the end of this blog for how I cook mine!), crock pot shredded chicken, or even ground beef if that's what you've got on hand! You can add any filler ingredients you'd like to go with the chicken and cream cheese, too! I'd love to add black beans to mine, but not everyone in our house enjoys beans, so I haven't tried that just yet! Don't like red sauce? Use green! We've even skipped the shredded cheese on top and combined a can of white queso with our enchilada sauce for a creamier sauce and they taste just as good.

As a huge fan of freezer meals, this is one recipe that freezes excellent. You just prep it like you're going to bake it (or make a double batch..one to bake and one to freeze), cover with foil and write the baking instructions on the foil along with what's inside! I do recommend making sure they are thawed prior to baking, otherwise they take forever and a day to heat through.


Tip for instant pot shredded chicken: Place boneless, skinless chicken thighs** (mine are usually thawed) on steam rack that came with your instant pot, add 1 cup of water then pressure cook on high for 20 minutes and allow for it to naturally release once cooking time is up. Then shred with a hand or stand mixer to make very finely shredded chicken. This is the point I also add my cream cheese and seasonings, it combines them extra good!
**You can use boneless, skinless chicken breasts if you'd like, we just prefer thighs because they tend not dry out as much as breasts.
